The Kiridashi has a three inch blade designed with a flat edge. Try it and it will soon become the knife you reach for most often; in fact, having two might be in order! Best used with the ingredients in hand, this replaces a paring knife.

Handle in Desert Ironwood sourced from Arizona, with a cinnamon liner. Ironwood is the process of becoming petrified and therefore does not need to be stabilized. It is heavier and more dense than most wood, and will darken with use as it naturally oxidizes.
